Fish waste and uneaten food produce ammonia - toxic to fish. Beneficial bacteria convert ammonia to nitrite (also toxic), then nitrite to nitrate (less harmful in moderation). That chain - ammonia → nitrite → nitrate - is the nitrogen cycle. Without it, your tank can’t handle fish safely.
